  • The class is conducted in a demonstration format. After the class you can cook the food at home at anytime

What is tantan ramen & gyoza?

Tantan Ramen is a popular Japanese spin on a noodle dish originating from Sichuan, China. While the variety you can pick up from a street vendor often includes meat in it, our plant-based (vegan & gluten free) version of this ramen dish tastes just as authentic, delicious & hearty! Gyoza are doughy, pan fried dumplings stuffed with a variety of fillings that are regular fixtures at ramen shops throughout Japan. They usually come with a signature sauce for dipping.

What are spring rolls & soy-sauce ramen?

Soy Sauce Ramen is a popular Japanese variant of ramen noodles that is made with a soy-sauce base. While the variety you can pick up from a street vendor often includes meat in it, our plant-based (vegan & gluten free) version of this ramen dish tastes just as authentic, delicious & hearty! Our spring rolls are made with a hearty stuffing of vegetables accompanied by a side of chilli oil.

What are udon & tempura?

Udon is a type of thick Japanese noodles that are the subject of very colourful origins; from being introduced by a Rinzai monk in 1292A.D. to being imported over by a Japanese envoy to Tang dynasty China. Whatever the case, it is generally enjoyed with a hearty broth of your choice and different types of toppings that are guaranteed to leave you full and happy. Tempura is deep fried vegetables (or seafood and meat for that matter), often served together with udon.

What is unagi?

Unagi is Japanese for freshwater eel, a common ingredient in Japanese cooking. We use modoki ryori techniques to create a plant-based version of unagi. Modoki ryori is food which uses vegetable ingredients to imitate the appearance and texture of meat and fish. It is highly popular in shojin ryori cooking – as you can enjoy a healthy plant-based version of dishes usually containing animal products!

Our unagi is fully plant-based and serves as a healthy budget alternative both for vegans and non-vegans alike.

What is okonomiyaki? 

Known as Japanese-style pizza, okonomiyaki is one of Japan's most loved dishes. This savory pancake-like dish is mostly found being sold on the streets, but can also be found in most high-end restaurants.

You will also learn how to non-oil tofu mayonnaise and our secret okonomiyaki sauce - both indispensable for a mouthwatering okonomiyaki!

What is nigiri sushi? 

Nigiri is a variant of sushi which is made by wrapping a topping (either fish or vegetable) on a around of vinegar infused rice. Commonly. The topping may be bound to the rice by using seaweed (nori). While the concept is simple, the technique for creating these delicious sushi is one that takes practice & patience.

What is maki sushi?

Maki sushi is made by wrapping a cluster of vegetable fillings inside rice by using a strip of nori (seaweed). Inari sushi is made by wrapping sushi rice inside a delectably fried tofu pocket. Tempura is an excellent side dish made by batter fried vegetables (and sometimes seafood).

What is a character bento?

Character Bento (Chara Ben) lunch boxes are a staple in the lives of many Japanese children. Lovingly prepared by their mom's, the food is arranged to form scenes and characters from popular shows and comics. We usually teach students to prepare our officially licensed Shaun the Sheep bento, but custom designs can be done on request.

What is raw food?

Raw food is made with ingredients that are not processed or cooked. For the dandan ramen, we will be making the noodles and broth from scratch. The matcha cake is also simple to make and requires just a blender!

What is a cheeseless cheesecake?

Our cheeseless cheesecake is made to mimic the consistency and taste of regular cheesecake. In fact, you wouldn't believe it's not cheese! Don't forget to try our vegan tofu chocolate brownies either!

What is a katsu curry?

Katsu curry is a Japanese take on curry accompanied by a (typically pork) cutlet (katsu). Our variant uses a soy cutlet instead and a plant based curry roux as well. It's all of the taste and deliciousness in a healthier and more eco-friendly package!
