Why do you cook plant-based food?

I learned about veganism from a book written by Dr. Dame Jane Morris Goodall and ended up reviewing my own food habits. With a growing interest in rye bread and whole wheat bread, I started taking bread making classes and and eventually also teaching students myself.

When living in Bangkok, I was impressed with the international environment and started dreaming of having my own international classroom. Upon returning to Japan, I earned qualifications for cooking vegan and vegetarian Japanese food. Now I want to teach others about the appeal of vegan Japanese food and different types of vegan breads.
