Why do you cook plant-based food?

I was born and raised on a farm north of Sendai, Japan. Having loved cooking since I was young, I learned how to make the family recipes early and the basics of traditional Japanese cooking, such as using an abundance of vegetables to create healthy and hearty meals. This formed the foundation of my cooking today and Bentoya.
